Miguel was responsible for coming up with all the recipes and training the kitchen personnel, while Victor and Jodi were in charge of the front of the house as well as the bookkeeping. Miguel’s talent, commitment to quality, as well as techniques he learned from working at his uncles’ restaurants and watching his parents cook, helped him create many unique renditions of traditional Mission-Style Mexican dishes. Though these dishes are all outstanding, one item stands head and shoulders above the rest: Papalote Roasted Tomato Salsa.
